A kink is used in a thermometer to stop the mercury from expanding or condensing. The kink basically prevents the mercury from falling back to the bulb of the thermometer so that we could note the reading on it. the part closest to the bulb contracts back into the bulb, while the remaining section of mercury just contracts where it is in the tube . So i hope you can pretty well understand that without the kink more liquid would contract back to the bulb and lead to consistently lower readings.
