The mesophyll cells of leaf provide large surface area for evaporation.Water is drawn from xylem into the mesophyll cells water makes a water film around the cell wall of mesophyll cell from where it evaporates into the air spaces of leaf then they diffuse from air spaces to stomata from where they pass to the outside air.
