it use to helping to create a food bolus, so it can be swallowed easily.

Basically, Saliva digests 25% of starch in mouth only. Saliva also lubricates the bolous or chewed food for easy swallowing also saliva has some enzymes which act as a antiseptic. Also it keeps our teeth clean and mouth hydrated.
