What isracidity ? meation any two ways by which racidity can be prevented?

firstly it is rancidity not racidity and it is define as the chemical decomposition of oils and fats

can be prevented by two methods:

1. packing of food materials should be replace the air with nitrogen

2.addition of antioxidants
