Cutting of vegetables means a consumption of mechanical energy but cooking means a consumption of chemical energy in the form of heat either done by fire of radiations whichever be the case . If you want to know about which kind of change it is , first one changes the physical dimensions of the vegetables but np change in the chemical properties of the vegetables . In the second case we find a change in the chemical properties of the vegetables as we supply heat so the biomolecules in the vegetables break up and turn to simpler substances thus there is a change in chemical and physical characteristics as well of the vegetables since we see that the vegetables soften and becomes edible.
