Into the air, just that. The water vapor mixes with the air, and becomes part of it (we call it humidity). That's why water stops drying up if you put an airtight lid over it: the air under the lid takes all the water vapor it can hold, and the water can't evaporate any more.

The air with the water in it circulates with wind an convection currents. It can be removed from the air in one of two ways: either it comes into contact with something that absorbs water, or it cools down. When the air cools, some of the water vapor turns back into liquid. That forms condensation on cold surfaces and dew on the grass in the mornings. If it condenses in the air it forms fog and clouds and eventually rain. That's how the water that evaporates gets back to the ground to start the whole process over.
