We avoid eating seeds of many fruits that are very unpalatable, Some are quite bitter for humans. Some are too hard to eat and indigestible. That is the defense mechanism of some plants to ensure survival of their species.

We do eat the seeds of watermelon, melon, pumpkin etc. The thin seed shell is split open - the kernel is eaten and the shell discarded.
