- this happens by the action of a fungi called yeast.
- yeast is a living organism that is mixed into dough.and when it is mixed it finds a warm place with moisture and food.
- yeast can survive both with aerobic and anaerobic respiration
- when it undergoes anaerobic respiration it happens to release certain amount of carbondioxide that forms bubbles in the dough and makes it soft and spongy.
- and here the dough with CO2 bubbles occupies more space than a pure dough.this increases its size which is called rising.
this process is also known as fermentation which gives the dough a sour taste
so..this is the reason why the dough is rised while making idli,bread etc.
