Gelidium and gracilaria are the type of the red algae from where the agar-agar is the substance can be obtained which is used to prepare ice cream and jellies.  

EXPLANATION:

It is a gelatin like material and it is also useful for the canning of fish, poultry, meat and cosmetics, medicines etc. It is act as a thickening material for the ice cream making. The agar is also not soluble in cold water.
