In a uniform circular motion, speed is the only quantity which remains constant.
In a uniform circular motion, body moves around a circular path with constant speed. At each point, it's direction of motion is tangential to the circular path. That means, the direction of velocity at each point is different. So, velocity is not constant (as velocity is a vector)
Plus, there is a centripetal acceleration acting towards the centre of the circle. It has a constant magnitude, but as it's direction keeps changing, it is also not constant.
