We all know that specific heat of water is very high. Higher the specific heat capacity of a body,the more heat is required to raise the temperature of a body.
Since,watermelon has a very high amount of water in it ( about 90%), it has high specific heat capacity and therefore thus does not heat up easily. This keeps it cool for a long time after removing it from a fridge on a hot day.
