what role does specify heat play in keeping a watermelon cool for a long time after removing it from a fridge on a hot day?

It is Specific Heat  or Specific heat capacity.  - but not specify heat.
The question needs to be corrected.

Heat energy required to increase the temperature of an object =  mass * specific heat capacity * increase in temperature in °C
           = heat capacity * increase in temperature in °C

Specific heat capacity is the energy required to increase the temperature of an object of unit mass by 1 °C.

If the specific heat is higher then the amount of heat energy required to increase the temperature of an object by 1°C is higher.  So it takes a longer time to heat up, if the surroundings are supplying heat energy at a constant rate.
