yeast is used to perform anaerobic respiration in sugar cane which results in convertion of sugar cane to ethanol.

Yeast Fermented the molasses left after the cane sugar is extracted and produce ethanol or yeast separate the glucose and fructose from the molasses and Fermented to produce ethanol
