Cell fractionation is done when you centifuge cell material from cells that have been lysed (the cells are ripped apart by shear forces, done by things like pulling the cell suspension into a needle-tipped syringe and ejecting it, over and over). Fractionation can be done in different ways--you can centrifuge it a one speed, then separate the pellet then raise the speed, seperate a new pellet, increase the speed even more, take out another pellet; etc. That is called differential centrifugation. Another way is to create a density gracient in the solvent, with the bottom of the tube containing very dense fluid while the upper parts have lower density (usually with sucrose, called sucrose gradient sedimentation) where the cell constituents will fall to the point where the density of the fluid is the exact same as the density of the constituent (so not everything will necessarily sediment to the very bottom of the tube).
Ultra centrifugation just refers to some incredibly high speed used in the centrifuge, but it doesn't necessarily say which type of cell fractionation method was used--it only tells you something about the speed.
