I don't think anyone sets out to memorize all the elements. You can start with the things you'll use most often. Think about the ways you will organize your content. 
Headers, paragraphs, lists, images and divs will be used frequently. Also line breaks and horizontal rules. Faith makes a good point about structure. Since you're starting with HTML 5, it makes sense to start using those correctly now. 

The important thing is to dig in and start building pages. As you do this you'll come to learn the things you use most often. When the time comes to add something new, you can always look it up. You'll also want to be learning CSS as soon as you get a beginning familiarity with HTML.
