The saliva moistens the food and makes its passage smooth and easy through the alimentary canal for further processes.. it also breaks down the complex food substance to simpler ones..

Salivary amylase (ptyalin) is mixed with food in the mouth doing chewing by teeth . It moistens the food and breaks it into simpler sugars like maltose and sucrose which is easier to act upon by other parts.
