Dolphins, like any living creature that is capable of feeling happiness or sadness, will make their feelings known to humans, by the way they interact with them.
When I lived in Hawaii (1981-92), I had the honor of interacting (and helping to train) some of the dolphins at SEA LIFE PARK, on the island of Oahu, where Honolulu is located.One way that you can tell (when interacting with or training them) about their level of "happiness," is by observing how eager they are, to perform the tasks that you are trying to get them to do. Basically, happy dolphins perform readily and well, while those who don't are probably indicating that they are sad about something, or perhaps physically ill.
Just as no dolphin is happy 100% of the time, neither are they always unhappy, but their behavior patterns are very "telling" to their human handlers.
There is a single-panel comic that I was shown by one of the lead trainers, when I first began my long association with the park. It showed two dolphins in a tank, and one was saying to the other, regarding their human female trainer, "I think we have her trained now. To get her to toss you a fish, just dive through that hoop over there."
