Fats don't mix with water and all the enzymes are water based making it difficult for lipase enzymes to gain access to a lot of the lipids, therefore bile is used to break down the fatty molecules. The small intestine has a large surface area as the inside of the small intestine is folded inwards many times to form Villi. This allows for easy absorption of the 'small droplets'
