The mixture is collidal solution which acts as a dispersing medium (liquid). When it baked the yeast present in the mixture respire and release carbon dioxide which acts as a dispersed phase (gas). They together form bread. As we know that when gas mixes in a liquid it form a foam so bread is a solid foam.
