It is the process of cooling a hot ,concentrated solution of a substance to obtain crystals is called crystallisation.....it is done for taking out impure substance from pure substance ......eg To odtain Pure copper sulphate from an impure sample etc ....

By crystallisation method, pure solid in the form of crystals can be separated.
