Subsistence crisis was an economical crisis especially that related to the increase in food prices which was as a result of either of a natural or man made disaster and which led to a marked decrease in the survival chances of large numbers of people.
Here is the flow chart that can be followed for this definition:
Natural or man-made disaster-->reduced supply of food--->increased demand of food--->increased prices in food--->little availability of food--->reduced survival chances of  a population.
Reasons for persistent food crisis in France:
1) Increased levy of taxes by the King and also tithes by the church meant there was little left for sustenance for the French peasants.
2) The French population was large, only second to the imperial Russia. Its population was ever growing and this led to a shortage in the amount of food available.
3)This was also followed by a decrease in employment level which worsened the food crisis as many were unable to buy enough food.
4) Natural disasters such as hail and drought were common and led to destruction of most of the crops in the field leading to the decrease in the amount of food available.
