Enzyme is a protein in nature and in real sense, it is affected by various factors such as temperature, pH, enzyme concentration, substrate concentration, enzyme inhibitors among others.

So considering the addition of vinegar and being that it is acidic in nature, the addition of vinegar alters the pH of the given solution.

So due to the fact that enzymatic activities are affected by changes in the pH, the activity of the enzyme is affected too.

It will depend on whether the enzymes work best in acidic or basic medium.
