The Chinese cabbage's narrow leaves form on several thick stalks and are either dark green or dark purple, depending on the variety. Shred or chop the leaves for use in stir-fries and stews. Choy sum seeds -- sometimes spelled "choi sum" -- grow well in U.S. Department of Agriculture hardiness zones 4 to 10, where it does best as a spring or fall crop.
