For a few seconds, the Liedenfrost effect will protect your hands. Basically the nitrogen next to your skin will boil and keep the rest of the nitrogen away. Eventually, however, your skin will cool enough so that the nitrogen won’t boil and the skin will come into direct contact with the cold. At this point the outer layers of the skin will provide some insulation, until they freeze and so on and so on. Pulling out quickly at this time will give you a case of frostbite. The frozen cells will be damaged. Holding on longer will eventually cause the cold to seep in further until the entire hand is damaged.
