the almonds shrink becoz the water in the surrounding has high concentration.This is called the process of osmosis.

When almonds are soaked in water for a long time then the water present outside of almonds get inside the almonds through the process of osmosis and as water enters inside the almonds grow somewhat bigger.

when almonds are soaked in water then the process of osmosis takes place where the water from higher concentration enters to the lower concentration,the same process takes place in case of almonds also.That's the water enters to the almonds and it becomes bigger in size
