First note that sugar solution is a hypertonic solution which means that the medium had lower concentration of water than the cell. So when a plant cell is put in a sugar solution, it will shrink due to Osmosis taking place. Osmosis is the passage of water from a region of high water concentration to a region of low water concentration through a semi permeable membrane.If plant cell is kept in strengthful sugar solution it will shrink then only as it is losing water.
