Since you are heating a saturated sugar solution the water molecules will move away from eachother creating more space for sugar molecules this will allow us to dissolve more sugar in the solution
This solutions is known as super saturated suagar solution.
The reason for this is that when we heat water the solubility of the water increases and When we cool down the water the solubility decreases
