when we add salt to cucumber slices it actually draws out a good amount of water from it cuz of a process called plasmolysis. Due to this cucumber loses its shape n size.

But when the same cucumber is put back in water, it almost regains its shape n size due to something called as osmosis . Though not the exact shape, still it regains its shape.
