There are two main reasons for applying salt on mango pieces

• To absorb the moisture present in the mangoes and dry them. The magnesium chloride present in salt is an impurity which helps in absorbing the water of the mangoes. This will prevent them from rotting.


• For better taste, people can use salt during cutting the mangoes because it can reduce the bitterness of the mangoes.
