The enzyme Salivary Amylase acts on starch at slight acidic pH, i.e between 6-7.4 optimum is 6.8. The digestion of starch continues in esophagus by diasteses. When salivary amylase enters in the stomach it stops work bcoz the required pH for ptyalin is not enough by which it extints because of acidic pH.
