Catastrophe would primarily come to my mind if that happens

I'll list out some points based on fact that, if birds go extinct:

There would be an increase in some insect species, like locusts

Certain plants that rely on hummingbirds for pollination would become extinct.

Many plants that rely on seed dispersal by birds would have a difficult time. Loss of birds as pollinators would not initiate pollination. So, no pollinators means no pollination which means no flowers that produce fruits, and no fruits means no animals that rely on them.

Small mammals that currently compete with seed-eating birds for food would increase.

We might not get as many colds as we do now (there is some evidence that migrating waterfowl are at least partly responsible for moving cold viruses around the world).

The loss of guano as a fertilizer would be a blow to agriculture.

Goose down would become a precious commodity, and recycled down would sell for tens of thousands of dollars per pound.
