epiglottis is actually a flap like structure between trachea(wind pipe) and food pipe; if there is no epiglottis then there became a single passage for respiration and ingestion of food ,which makes it complex and troubling.

epiglottis is flap like valve structure where it allows the passage of food in to esophagus and air{containing oxygen and other gaseous compounds} into trachea. so, if epiglottis is totally absent in the body then it causes choking which means food can enter into trachea and ultimately human will die.
