HCl is very important in process of digestion or let's say breaking down of molecules so that we can absorb those molecules.
And see pH of HCl of our stomach is from 1-2
and due to mucosal layer present in our stomach we are protected from such high acidic HCl.
HCl controls bascicity of stomach too.

HCl helps in the break down of protein in the food we eat and also kills the bacteria in the food.
So if there is no HCl, then these important functions won't be carried out and the bacteria in the food would make us fall seriously ill.
Moreover digestion would be partial.
