These gastric juices perform their specific function like

HCl
1. Kills microbes in food
2. Creates acidic medium for pepsin to act
3. Also stops the action of salivary amylase

Mucus- prevents the walls of stomach from developing ulcers due to excessive secretion of HCL

Pepsin

Acts in acidic medium converts proteins into peptones and proteosis

So if these enzymes are not produced , then digestion process can't be completed
