Baking soda would give the cake a bitter taste, and would also damage the texture since baking soda is used to make crispy snacks, not soft cakes.

The cake will taste bitter.

  • If in the cake baking soda is used, it will disturb the entire recipe and the cake will rise than the standard rate and later fall down
  • Adding of excessive baking soda will on top make the cake taste bitter.
  • Since, the desired consistency is also effected, the crumb of the cake will be coarse and brittle, with a dropped middle.
