What would have happened if plants lack anthocyanin?

In food, the main sources of anthocyanins are berries, such as blackberries, grapes, blueberries etc, and some vegetables, such as egg-plants (aubergine) and avocado. Other sources include oranges, elderberry, olives, red onion, fig, sweet potato, mango and purple corn.

Anthocyanins are water soluble pigments comes under phenolic flavanoids category. It is responsible for providing colors to flowers therefore helpful in attraction of pollinators and chief component in plant defensive systems from preventing grazing from herbivores. In the absence of anthocyanin pollination will be suffered and grazing by herviores will increase.
