wheat dough it left open starts to emit foul smell becomes unfit for use. why?

When wheat dough is left in open, formation of fungus and reproduction of yeast present in it start talking place. Growth of fungus gives it a foul smell and presence of this micro-organism makes it unfit for consumption.
