when a chemical reaction occurs between CH4+O2 (Hydrocarbon + Oxygen) why are the products CO2+H2O (Carbon Dioxide + Water)?

Because,

When CH4+O2--->CO2+H2O

When CH4 reacts with O2. Hydrocarbon(CH4) do a reaction called Oxydation which is the reaction of gaining oxygen from the compound or losing hydrogen.

So, CH4 Loses hydrogen and gain oxygen.

and become CO2,

Then, Hydrogen is also reacts with oxygen. and become H2O.

This is called a displacement reaction In Which the more Active element displace the less Active element.
