Water can be a liquid, a solid, or a gas depending on temperature and pressure.
Boiling water is in two phases, some liquid and some gas simultaneously. Both the water and the steam are 100°c on a stovetop at sea level.
The lid on a pot is initially room temperature and acts as a condenser, the steam at 100°c cools as it gives up heat to the lid and changes phase back to a liquid.
