This happens because Fe is more reactive than Cu
A single displacement reaction takes place in this case.
When Fe is dipped in CuSO4 Fe displaces Cu and forms green coloured FeSO4 solution whereas Cu is deposited on the iron nail
In simple words iron takes place of copper and copper takes place of iron.
