When hydrate is heated, water molecules face a choice. ... When all the water is evaporated from hydrate, copper ions are left with only sulfate ions in their surroundings. As a result, substance changes its color from blue to white.

Blue colour is the indicator that it is hydrated means its containing water so when we heat it water is evaporated it becomes white and when again water is added again it becomes hydrated so again its colour changes to blue
