When chips are packed, the air in the packets is replaced with nitrogen to increase shelf life. Why
are the packets filled with nitrogen?

SINCE NITROGEN IS INERT OR UNREACTIVE IT DOESN'T SUPPORT THE GROWTH OF BACTERIA AS WELL AS DOESN'T REACT WITH THE CHIPS IN THE PACKET.

when fats and oils are oxidized they become rancid and the smell and taste change. substances which prevent oxidation are added to foods containing fats and oil. keeping food in air tight containers helps to Slow Down oxidation .chips manufacturers usually flush bags of chips with gas such as nitrogen to prevent the chips from getting oxidized.
