He does this because Gohan possesses tremendous potential as a fighter, even more than his father Goku, and that strength could be integral for Earth's survival (spoiler: it is). A second reason for Piccolo to do so is that he has sensed from Kami-sama's mind that he and Kami-sama will die within the next year

Goku died when his brother Raditz had came to earth for finding the Goku. As only 4 sayains were able to live according to Raditz and others. Goku's and Piccolo's strength was not so much to defeat Raditz. So, Goku would have to died in protecting the earth from the sayains.
Piccolo would have take Goku's son Gohan to train because:
i) Gohan was having a great power inside him which he was unable to use properly.
ii) Piccolo did know that he and Kami would be going to be die soon. And so, Piccolo would be unable to defeat Raditz for protecting the earth.
iii) They were having less powered Z-Fighters to win against the sayains.
