When a forest is present, the soil beneath it has a sponge-like quality. It can absorb water, and hold it, and all the organic matter in the soil, along with roots and fungal mycelia, makes it litteraly springy- like a sponge.
When the trees are removed, the creation of leaf litter, roots and fungal hyphae, stops- and whatever is left of that organic matter, in the soil, begins to decay and disappear- and the sponginess is lost.
In a forest, the leaf-canopy layer and leaf-litter layer both intercept rain before it hits the ground and thereby slow down raindrops. However in an area that was recently forest, while one rain drop by itself is of course insignificant, all together the drops from a rain event pelting bare ground at full speed, can greatly disturb the soil’s surface and allow surface particles to be more easily washed away.
Since the sponginess is gone, those same raindrops also begin to compact bare soil, down to some depth. This means that less volume of rain can soak into the soil. In addition, the loss of shade, leaf mulch and soil organic matter allows the soil exposed to full sun to dry out, possibly caking and cracking. Just like any clay, when cooked/ dehydrated, soil becomes very resistant to absobing water. So instead, when it rains, the water begins to just run off, over the surface of the soil- down hill- carrying surface material away. The flowing water quickly coalesces into rivulets, which begin to cut grooves and then, over time, channels, forming streams, all of which means that more and more soil is being carried away, down hill. That is errosion.
Especially if the site of the previous forest is near a coast, then that soil, which took geologic processes tens of thousands of years to make, is lost permanently to the sea.
