When any metal reacts with an acid , it displaces hydrogen (metals reactive than hydrogen).
But HNO3 is a strong oxidising agent.
It oxidises the liberated H2 to form H2O.
For example let's take zinc.
Zn + 2HNO3 -------> Zn(NO3)2 + H2O.
