because water of crystallisation this property is known as Hygroscopic nature.
CuSO4 forms when come in contact with water CUSO4.5H2O
when it losses these waters molecule stick to it,so it becomes white

CuSO4 when comes in contact with water forms CuSO4.5H2O which is blue in colour.
but when it loses the water molecules it becomes white.
