As water rushes in it displaces the gas which escapes in the form of bubbles.
If you would put a really empty bottle in water it would fill up in about a tenth of a second with no bubbles escaping.
You can try something similar by filling a bottle with hot steam. Once you put it water the rapid cooling will make the gas contract creating a low pressure inside the bottle which will then such up water surprisingly fast.
