Its because whenever two plates collide, there is the formation of geosyncline, which is a kind of depression and slowly and steadily sediments get deposited in it and leads to sedimentation of the depression bed. which on further compressive forces leads to the folding of sediments and the structure of mountain and range of mountain get emerge.
