The process involved in this is DIFFUSION. The blue copper sulphate crystals diffuses in water to give a blue coloured liquid. This process is very fast.

Copper sulphate is blue in colour.
So when copper suphate is added to water, the crystals dissolve into water imparting blue colour to the solution
This process could be called as " DISSOLUTION "
When a crystals are dropped in one part of the solution,it colours the whole solution blue this is due to "DIFFUSION".
