it turns into a violet colour as starch is present in the leaf.

When we add Iodine to the leaf, it turns into deep blue color because the leaf contains starch.
Change in the color of iodine to deep blue indicates the presence of starch.
{Such a property of starch is due to the presence of amylose in starch}
